chicken and veggies over couscous


I am the queen of the everything mixed together dinner:)

This is another of those great, quick super healthy dinners. I hope you like it as much as my family

2Tbl. dry bread crumbs

1/2 tsp black pepper

1/4 tsp. salt

1/4 tsp. dry rosemary crushed

10 oz. boneless chicken breast cut into 1/2 inch  strips

1/2 cup chicken stock

1 cup diced onion

1 cup sliced carrots

1 cup diced sweet potato

4 cloves garlic minced

1 zucchini cut in semi large chunks

1 8ounce can chopped tomato

1 cup couscous

crumbled feta

combine breadcrumbs thru rosemary in shallow dish.  Dredge chicken through it to coat well.

Coat with cook spray a 10 inch skillet. Over medium heat, cook chicken till no more pink in it.. 5 min. place on a plate and cover.

add chicken stock to skillet.  Heat it up and scrape browned bits off the sides.  Add the onions through garlic.  Stir constantly and cook for about 5-7 minutes.  You want the onion soft, but not browned.

add the tomatoes and chicken.  Cover and cook for another 10 mnutes.

In the meantime cook couscous per directions.

serve the chicken and veggies over the couscous, sprinkle with feta cheese.. delish!!
