Pumpkin chia pudding


Here is a GREAT healthy filling snack for mid day that I discovered on line thru several other blogs.  Lots of fiber makes this a satiating snack that feels sinful to boot!

Pumpkin chia pudding

3/4-1 cup of almond milk

1cup canned chilled pumpkin

2Tbl. chia seeds

2Tbl vanilla protein powder

1/2t cinnamon

1/2t pumpkin pie spice

1tsp vanilla

1T maple syrup or agave nectar

whisk all the ingredients together till clump free.  Refrigerate 1-2 hours. enjoy!

I also stir in 1/2 cup of nonfat greek yogurt for added protein and creaminess!
